Creamy Banana Breakfast Porridge with Strawberries, Raisins & Pumpkin Seeds
This is one of my partners favourite breakfasts and it never gets old. I reckon he has been having this every single morning over the last 6 months. Its so simple, a great cheap option for breakfast and is packed with long lasting energy. To speed the cooking process up if you are in a rush in the mornings, have your porridge pre soaking over night in the pot with your usual amount of water. Then the next morning when you are ready to cook the oats they will have already absorbed most of that water and will be lovely, plump and creamy. Pimp this porridge up with what ever nuts, seeds or fruit you have in the house, but it is crucial that you do not leave out the banana in the porridge.
15 MINUTES. SERVES 1

INGREDIENTS
120g oats
250ml water (or a mixture of water and plant based milk)
1 banana
25g raisins
pinch of salt
1 strawberry
1 tbs pumpkin seeds
1tbs hemp hearts
maple syrup
METHOD
Firstly add the oats add water to a saucepan over medium heat. Slice up half the banana and add it to the pot. Stir everything well.
Add the raisins and salt and stir again. Leave to bubble and thicken, stirring regularly, making sure the bottom does not burn.
While the porridge is cooking slice the remaining banana and strawberry.
The porridge should be done in 6/7 minutes, it should be lovely thick and plump.
Pour the porridge into your serving bowl. Arrange the banana and strawberry. Add more raisins if you have them. Sprinkle with hemp and pumpkin seeds
Drizzle with maple syrup and eat!
